Easy Chicken Teriyaki Wraps
Dinner doesn’t get easier than these Easy Chicken Teriyaki Wraps! Conquer those busy nights with an easy, good for you weeknight dinner that is done in no time flat.
Life is crazy. I hesitate to use the word busy, because really, everyone is busy. But some days, when the day is done and I finally make it to bed, I wonder how I made it through the day. When you are juggling being a mom, a wife, and a business owner, as well as taking care of a household, it’s no wonder that things get crazy.
In my life, there is no such thing as a “typical” day, (the joys of running your own business!), but let’s take a look at how a weekday might go in my life.
6am: the alarm goes off. I usually want to hit snooze a time or two, but my boys are usually right there, begging me to get out of bed. Go downstairs and do a little bit of morning work before waking my daughter up at 6:30 to get ready for school.
6:45am: breakfast for the whole crew. Usually something quick and easy.
7:25am: bus comes for my daughter for school. I change into my workout clothes for a quick workout at home before really starting the day.
9:00am: make a quick trip to the store because the grocery store I went to the night before was out of one ingredient that I needed.
10:30am: home for some recipe testing and recipe development. Today will be spent mostly in the kitchen and behind the camera.
12:00pm: short lunch break with the boys.
12:15pm: back into the kitchen for some recipe testing, as well as some photographing.
2:30pm: my daughter gets home from school, so it’s time to take some time with her for reading and homework. Spend the next little while with the kids playing.
3:30pm: back to the kitchen to clean up the disaster from the day. Realize that I have no idea what I’m going to make for dinner. I need something easy and quick, so I head to the Soy Vay website to find a recipe that will make dinner easy for me. After staring at a bottle of Soy Vay® Veri Veri Teryiaki® Less Sodium, I was inspired by the Soy Vay website to whip up these Easy Chicken Teriyaki Wraps for dinner. I mentioned that when the weather starts getting nice, I tend to gravitate towards wraps, burgers and sandwiches, and that night, I just happen to have a craving for a good wrap.
I used 2 shortcuts for this recipe. 1st, pre-cooked, shredded chicken. If you are a regular here, you know that I always keep my freezer stocked with this shortcut. And 2nd, a bottle of Soy Vay® Veri Veri Teryiaki® Less Sodium is always a time saver. I love the flavor, as well as the fact that it is filled with sesame seeds. Love it!!
There is a local restaurant here that sells Italian street food, and they put spaghetti in their wraps. I thought it was weird until I tried it and fell in love. So I thought I’d take that same idea and add some rice noodles to my wrap. It was the best idea!! These Easy Chicken Teriyaki Wraps were easy and fast, and hearty enough for a weeknight dinner. One wrap was definitely enough for me – they were quite filling!!
These are very versatile, as well – you can use whatever vegetables you have on hand. And I used some extra Soy Vay® Veri Veri Teryiaki® Less Sodium for dipping. The perfect weeknight meal for when you don’t know what you are going to make!

- 3 cups cooked, shredded chicken
- 1 cup Soy Vay® Veri Veri Teryiaki® Less Sodium
- 4 oz vermicelli rice noodles
- 6 (12-inch) flour tortillas
- 1 cup shredded purple cabbage
- ½ cup shredded carrots
- ½ cup julienned cucumbers
- ½ cup julienned red bell peppers
- ⅓ cup sliced green onions
- ⅓ cup cilantro leaves
- extra Soy Vay® Veri Veri Teryiaki® Less Sodium, for serving
- Combine the chicken and the teriyaki sauce and stir to combine. Set aside.
- Bring a large pot of water to a boil and cook the rice noodles according to the package directions.
- To assemble the wraps, place the tortillas in the microwave for 30 seconds to soften. Put one-sixth of the noodles down the center of one tortilla, followed by some of the chicken. Top with the cabbage, carrots, cucumbers, red bell peppers, green onions and cilantro. Fold the sides of the tortilla in, then roll the tortilla, enclosing the filling on the center. Serve.

Tex-Mex Chicken Club Wraps
Ingredients
- Marinade:
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon crushed red pepper
- 1/2 teaspoon chili powder
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 tablespoon tomato paste
- Wraps:
- 2 pounds boneless, skinless chicken breasts
- 1 cup light mayonnaise
- 1 tablespoon finely chopped canned, seeded chipotle chili
- 8 10-inch flour tortillas
- 16 slices bacon, cooked
- 16 slices pepper Jack
- 3 tomatoes, thinly sliced
- 2 avocados, peeled, pitted and thinly sliced
- 1 red onion, thinly sliced
- 3 cups shredded green-leaf lettuce

How to Make It
Make marinade: Mix all ingredients in a ziplock bag. Add chicken, seal bag, rub marinade all over and chill at least 2 hours.
Preheat grill to mediumlow and cook chicken, 6 minutes per side, until cooked through. Let cool, then slice. Mix mayonnaise and chili.
Assemble wraps: Spread mayonnaise mixture over tortillas. Divide all ingredients among tortillas. Roll up; serve.

SERVES:
Ingredients Nutrition
- 1 ⁄2 cup balsamic vinegar
- 1 ⁄3 cup olive oil
- 1 tablespoon sugar
- 1 clove garlic, pressed
- 1 ⁄2 teaspoon salt
- 1 ⁄4 teaspoon pepper
- 6 boneless skinless chicken breasts
- 1 large green bell pepper, quartered
- 1 large red bell pepper, quartered
- 1 large purple onion, cut into 3/4 inch thick slices
- 2 large avocados, peeled and sliced
- 8 (10 inch) flour tortillas
Avocado Mayonnaise
Directions
- Peel avocados, and mash in a small bowl; stir in mayonnaise and remaining ingredients.
- Cover and chill.
- Whisk together first 6 ingredients.
- Place chicken breasts in a heavy-duty zip-top plastic bag; pour half of vinegar mixture over chicken.
- Place bell pepper, onion, and avocado in a heavy-duty zip-top plastic bag; pour remaining vinegar mixture over vegetables.
- Seal bags, and chill at least 1 hour, tossing occasionally.
- Remove chicken and vegetables from marinades, discarding marinades.
- Grill chicken and vegetables, covered with grill lid, over medium-high heat (350* to 400*F/ 175* to 205*C) 20 minutes or until chicken is done, turning once.
- Remove vegetables from grill when done.
- Cool; cut chicken and vegetables into strips.
- Spread tortillas with Avocado Mayonnaise.
- Place chicken and vegetables on tortillas; roll up.
- Cut in half diagonally.

Cajun Chicken Wraps
SERVES:
Ingredients Nutrition
- 3 tablespoons cajun seasoning
- 1 tablespoon all-purpose flour
- 1 teaspoon paprika
- 12 ounces boneless skinless chicken breasts, cut into strips
- 4 medium fat free tortillas
- 1 ⁄2 small red onion, thinly sliced
- 2 cups mixed baby greens, mesclun lettuce leaves
- 8 medium basil leaves
- 4 teaspoons fat-free mayonnaise
- 1 1 ⁄2 teaspoons fresh lemon juice
- 1 ⁄2 teaspoon cajun seasoning
Directions
- Combine 3 tablespoons seasoning mix, flour, and paprika. Season chicken with salt and pepper and dredge in seasoning mixture.
- Coat a large, nonstick pan with cooking spray. Over medium-high heat, add chicken to pan and saute until cooked through, about 1 to 2 minutes per side. Remove chicken from heat and set aside.
- Combine mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for dressing.
- On each tortilla, spread 1 teaspoon dressing; add onion slices, greens and two basil leaves. Top with chicken pieces (approximately two per tortilla) and wrap.

Hähnchen-Wraps
Einfach und dennoch so lecker. Wraps sind einer unserer Lieblingsspeisen, da sie schnell zubereitet sind und sie toll variierbar sind. Zudem passen sie hervorragend zum Sommer.

Zutaten für 1 Portionen
Paprika-Hähnchen gefroren in die Pfanne geben und nach Packungsanweisung im heißen Öl knusprig braten.

Schief gewickelt?: Spargel-Wraps mit Hähnchen
Dennoch, so ganz normal entwickelt sich dieser Frühling nicht, oder? Wir haben MAI, und es ist zu kalt, zu nass und irgendwie aprilmäßig. Ich glaube, das Wetter spielt uns dieses Jahr einen riesigen Streich. Oder wir haben einfach Pech, 2013 und so.
In der Hoffnung auf einen schönen Sommer mache ich das Beste daraus, hole ich mir den Frühling kurzerhand auf den Teller und denke mir die Sonne einfach dazu, wenn ich im Nieselregen auf der Terrasse rumhopse und das immer kälter werdende Essen fotografiere.
Denn wenn dieser Frühling glaubt, er könne uns veräppeln, dann. ja dann, dann ist er schief gewickelt!
4 getrocknete Tomaten (in Öl)
400 g Hähnchenbrustfilet
1 Becher saure Sahne
1 TL abgeriebene Zitronenschale
Das Hähnchen abbrausen, trocken tupfen und in kleine Stücke schneiden. Spargel waschen, evtl. schälen und in 1-2 cm große Stücke schneiden, die holzigen Enden wegwerfen. Lauchzwiebeln waschen, längs halbieren und ebenfalls in Stücke schneiden, die getrockneten Tomaten abtropfen lassen und klein schneiden.
Knoblauch abziehen, pressen und mit Zitronenschale und saurer Sahne verrühren. Dip mit Zitronensaft, Salz und Pfeffer abschmecken und beiseite stellen.
Öl in 2 Pfannen erhitzen, in der einen das Hähnchen und in der anderen den Spargel einige Minuten bei mittlerer Hitze anbraten. Lauchzwiebeln und getrocknete Tomaten zum Spargel geben, ebenfalls anbraten und mit Salz und Pfeffer würzen. Das Hähnchen mit Salz, Pfeffer und Cayennepfeffer würzen, Honig hinzufügen und weiterbraten, bis das Fleisch schön gebräunt ist. In der Zwischenzeit den Salat waschen und trocken schleudern und die Kirschtomaten in Scheibchen schneiden. Wraps erwärmen.
Die Wraps jeweils mit 1 - 2 TL Dip bestreichen, etwas Salat und jeweils 1/6 der übrigen Zutaten darauf verteilen, mit frisch geriebenem Parmesan bestreuen und fest aufwickeln, dann quer halbieren und servieren.
Schmeckt übrigens auch prima kalt, ich habe die Reste am nächsten Tag im Büro verputzt.

However, the problem with a traditional chicken salad recipe is it’s loaded with mayonnaise. 1 tablespoon of mayonnaise is 100 calories and some recipes call for at least ½ cup or more. As you can imagine this can be an issue for those of us trying to eat healthy.
Well I found a solution. A delicious solution. One that will never have you missing mayonnaise ever! I am not kidding. Plain Greek yogurt and a ripe avocado mashed together and mixed with chopped or shredded chicken breast. Who knew?! I threw in some spices and chopped red onion for crunch. OH MY GOD. Soooo good.

This recipe is very versatile and you can play around with different flavors. I was thinking about adding in some feta cheese and oregano for a little Greek flare. Maybe a little chipotle seasoning and cilantro for some added kick. Yum! I also really enjoy the crunch from the red onion. If you are not a red onion fan then leave it out or add in another crunchy vegetable. Sky is the limit with this basic recipe.

- 1 ripe avocado, removed from skin
- ½ cup plain Greek yogurt
- ½ teaspoon garlic granulated garlic
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ ground pepper
- 2 cups finely chopped or shredded cooked chicken
- ½ red onion, chopped
- 1 small lime
- In a medium bowl mash together avocado and greek yogurt until smooth.
- Stir in garlic, onion powder, salt, and pepper.
- Add chicken and red onion to avocado mixture and stir until all ingredients are combined.
- Squeeze in half the juice from the lime. Give it a taste, squeeze in the rest of the lime if needed. I used all of the lime juice.
- Serve in a wrap, in a pita, or anyway you typically enjoy chicken salad.
This recipe can be made up to 3 days ahead of time and stored in the refrigerator.

I just made this with leftover oven roasted turkey breast. So good!! I added some finely chopped celery for an extra crunch. I rolled it in a spinach wrap. The avocado and plain yogurt was so good I may never use mayo in anything again! Love this website! I’ve lost 25 lbs since mid-April using your recipes and getting off my duff to walk and use the elliptical. Thanks!

I shredded a carrot and diced 2 stalks of celery and a cucumber then added 4 oz cooked salmon from last night … then 1/2 an avocado and 2 T non-fat Greek yogurt … mixed it all up and put it in an Herbed Spinach tortilla wrap. We split it for lunch and there’s enough for a snack or a small wrap for our 22yr old. Dr. Just added 2 more blood pressure medications for the hubs & told him to lose 50 lbs. Your site will be of great help!
I just made this for lunch and it is delicious!! I added almost 3 cups of chicken, and it was still very creamy. Wonderful on a wrap with some torn romaine and cucumbers! Thanks for the awesome recipes!

I am totally stuck on Joseph’s Flax, Oat Bran & Whole Wheat Square Lavash for wraps. It is a bit thin, but only 50 calories for half of a large piece. This is my go-to bread. Their pitas are great also. Can get at Walmart or order online.
Love adding halved green or red seedless grapes to chicken salad…..chopped walnuts or sunflower seeds are nice touches, too.

Sorry to be a non-avocado and greek yogurt person, but they just don’t appeal to me, any suggestions on substitutes. I love chicken salad and would love some refreshing and weight conscious suggestions to try!

I’ve been using Greek yogurt as a mayo substitute for quite awhile now but decided to try the avocado with it. It’s definitely a good combo. I took your recipe and gave it a little spicy kick as I’m very into spicy. I put fresh cilantro, red onion, yellow bell pepper, garlic, a jalapeño finely diced, cumin and chipotle chili powder. I used a portion of a rotisserie chicken to make it. It turned out wonderful! Thanks for the idea.
Sounds luscious! One tiny suggestion: When you give the mixture that first squirt of lime juice, mix it in and let it all stand for about 10 to 15 minutes in order for all the ingredients to “marry”. That can make all the difference in flavor, than if you add more right away. This standing time is good also for other mixtures such as salsas, guacamole, dips and spreads.
I had this tonight and added green apples instead of red onion (I’m allergic) It was great! Eat it on a bed of lettuce.

I made this for lunch today. So far, it tastes good. I have it sitting for a bit for the flavors to blend together. Question, I’ve never bought or made anything with avocado before, they had a sticker that said RIPE in the store, but they did not seem to mush up easily…..I even put them in a mini food chopper, but it was definitely not smooth….still tastes pretty good. Did I do something wrong with the avocado??
If the avocado is ripe it should give a little when you press on it. You don’t want it to feel mushy or it’s too ripe. It it feels hard to the touch then it’s not ripe. If you put it in a brown paper bag or put it in a bowl with other fruits it will speed up the ripening process.
This is sooooo much better than using mayo! My chicken was pre-seasoned thighs (Greek recipe) which made it even more tasty! I also added chopped celery. I used garlic powder. It came out delicious. Want to try the tuna one next!
This was an awesome recipe, I am a weight watcher member and have missed chicken salad since I don’t like the lowfat mayo, this is phenomenal! Even my mom loved it and she is skeptical of some of my lowfat recipes sometimes.

I made this today. I cooked the chicken in a slow cooker for 6 hours with 2 cups of organic chicken broth. Easily shredded. So freagin yummy!
Can’t wait to try this. Chicken was cooked with garlic and onion. Will leave the powdered forms out (add TOO much sodium). Will opt for celery, too. Love this.

It is DELICIOUS! I subbed some diced cucumber for the onions to keep the crunch without too much onion.

I added a bit of cucumber (deseeded and chopped), a bit of chopped lettuce and a few chopped fresh basil leaves… You should try it! 😉

Just made this for lunch (minus chopped onions) rolled up on a lettuce leaf and it was delicious!! My 11 year old , 9 year old and 3 year old all liked it too. Looking forward to viewing more of your recipes. I am not trying to lose weight right now because I am pregnant, but I am trying to eat as healthy as possible and not gain too much weight as I already had 20 pounds extra. I just made this and it is AMAZING! I added grape tomatoes cut up to absorb some of the liquid. I wrapped the salad in turmeric wraps which really added nicely to the taste. Will definitely make this again!
