Chicken-Avocado Sandwich Wrap

SERVES:

Ingredients Nutrition

  • 1 ⁄2 cup balsamic vinegar
  • 1 ⁄3 cup olive oil
  • 1 tablespoon sugar
  • 1 clove garlic, pressed
  • 1 ⁄2 teaspoon salt
  • 1 ⁄4 teaspoon pepper
  • 6 boneless skinless chicken breasts
  • 1 large green bell pepper, quartered
  • 1 large red bell pepper, quartered
  • 1 large purple onion, cut into 3/4 inch thick slices
  • 2 large avocados, peeled and sliced
  • 8 (10 inch) flour tortillas
Avocado Mayonnaise

Directions

  1. Peel avocados, and mash in a small bowl; stir in mayonnaise and remaining ingredients.
  2. Cover and chill.
  3. Whisk together first 6 ingredients.
  4. Place chicken breasts in a heavy-duty zip-top plastic bag; pour half of vinegar mixture over chicken.
  5. Place bell pepper, onion, and avocado in a heavy-duty zip-top plastic bag; pour remaining vinegar mixture over vegetables.
  6. Seal bags, and chill at least 1 hour, tossing occasionally.
  7. Remove chicken and vegetables from marinades, discarding marinades.
  8. Grill chicken and vegetables, covered with grill lid, over medium-high heat (350* to 400*F/ 175* to 205*C) 20 minutes or until chicken is done, turning once.
  9. Remove vegetables from grill when done.
  10. Cool; cut chicken and vegetables into strips.
  11. Spread tortillas with Avocado Mayonnaise.
  12. Place chicken and vegetables on tortillas; roll up.
  13. Cut in half diagonally.

Easy Chicken Teriyaki Wraps

Dinner doesn’t get easier than these Easy Chicken Teriyaki Wraps! Conquer those busy nights with an easy, good for you weeknight dinner that is done in no time flat.

Life is crazy. I hesitate to use the word busy, because really, everyone is busy. But some days, when the day is done and I finally make it to bed, I wonder how I made it through the day. When you are juggling being a mom, a wife, and a business owner, as well as taking care of a household, it’s no wonder that things get crazy.

In my life, there is no such thing as a “typical” day, (the joys of running your own business!), but let’s take a look at how a weekday might go in my life.

6am: the alarm goes off. I usually want to hit snooze a time or two, but my boys are usually right there, begging me to get out of bed. Go downstairs and do a little bit of morning work before waking my daughter up at 6:30 to get ready for school.

6:45am: breakfast for the whole crew. Usually something quick and easy.

7:25am: bus comes for my daughter for school. I change into my workout clothes for a quick workout at home before really starting the day.

9:00am: make a quick trip to the store because the grocery store I went to the night before was out of one ingredient that I needed.

10:30am: home for some recipe testing and recipe development. Today will be spent mostly in the kitchen and behind the camera.

12:00pm: short lunch break with the boys.

12:15pm: back into the kitchen for some recipe testing, as well as some photographing.

2:30pm: my daughter gets home from school, so it’s time to take some time with her for reading and homework. Spend the next little while with the kids playing.

3:30pm: back to the kitchen to clean up the disaster from the day. Realize that I have no idea what I’m going to make for dinner. I need something easy and quick, so I head to the Soy Vay website to find a recipe that will make dinner easy for me. After staring at a bottle of Soy Vay® Veri Veri Teryiaki® Less Sodium, I was inspired by the Soy Vay website to whip up these Easy Chicken Teriyaki Wraps for dinner. I mentioned that when the weather starts getting nice, I tend to gravitate towards wraps, burgers and sandwiches, and that night, I just happen to have a craving for a good wrap.

I used 2 shortcuts for this recipe. 1st, pre-cooked, shredded chicken. If you are a regular here, you know that I always keep my freezer stocked with this shortcut. And 2nd, a bottle of Soy Vay® Veri Veri Teryiaki® Less Sodium is always a time saver. I love the flavor, as well as the fact that it is filled with sesame seeds. Love it!!

There is a local restaurant here that sells Italian street food, and they put spaghetti in their wraps. I thought it was weird until I tried it and fell in love. So I thought I’d take that same idea and add some rice noodles to my wrap. It was the best idea!! These Easy Chicken Teriyaki Wraps were easy and fast, and hearty enough for a weeknight dinner. One wrap was definitely enough for me – they were quite filling!!

These are very versatile, as well – you can use whatever vegetables you have on hand. And I used some extra Soy Vay® Veri Veri Teryiaki® Less Sodium for dipping. The perfect weeknight meal for when you don’t know what you are going to make!

  • 3 cups cooked, shredded chicken
  • 1 cup Soy Vay® Veri Veri Teryiaki® Less Sodium
  • 4 oz vermicelli rice noodles
  • 6 (12-inch) flour tortillas
  • 1 cup shredded purple cabbage
  • ½ cup shredded carrots
  • ½ cup julienned cucumbers
  • ½ cup julienned red bell peppers
  • ⅓ cup sliced green onions
  • ⅓ cup cilantro leaves
  • extra Soy Vay® Veri Veri Teryiaki® Less Sodium, for serving
  1. Combine the chicken and the teriyaki sauce and stir to combine. Set aside.
  2. Bring a large pot of water to a boil and cook the rice noodles according to the package directions.
  3. To assemble the wraps, place the tortillas in the microwave for 30 seconds to soften. Put one-sixth of the noodles down the center of one tortilla, followed by some of the chicken. Top with the cabbage, carrots, cucumbers, red bell peppers, green onions and cilantro. Fold the sides of the tortilla in, then roll the tortilla, enclosing the filling on the center. Serve.

Mexican Chicken Wrap

Add kick to your chicken wrap with a spicy, Mexican salsa.

Ingredients

  • 3/4 cup salsa
  • 1/2 cup mayonnaise
  • 4 (10-inch) flour tortillas
  • 1 1/3 cups grated Cheddar
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken thighs, trimmed and cut into 1/2-inch pieces (1 lb.)
  • 1 1/2 teaspoons hot sauce
  • Salt
  • 2 cups finely chopped iceberg lettuce
  • 1 cup chopped tomatoes

How to Make It

In a bowl, stir together salsa and mayonnaise. Cover and refrigerate dip.

Preheat oven to 350°F. Arrange tortillas on 2 baking sheets; sprinkle evenly with cheese. Bake for 5 minutes, until cheese has melted.

Meanwhile, warm oil in a large skillet over medium-high heat. Add chicken, hot sauce and salt and cook, stirring, until just cooked through, 4 minutes.

Place tortillas on a counter. Top with lettuce, chicken and tomatoes. Roll up, cut in half and serve with dip.

Ingredients

  • Marinade:
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoon chili powder

  • 2 pounds boneless, skinless chicken breasts

How to Make It

Make marinade: Mix all ingredients in a ziplock bag. Add chicken, seal bag, rub marinade all over and chill at least 2 hours.

Assemble wraps: Spread mayonnaise mixture over tortillas. Divide all ingredients among tortillas. Roll up; serve.

Wrap mit Hähnchen und Curry-Mango-Sauce

Alles in allem fand ich, dass die Sauce sehr gut schmeckt und auch die Zutatenliste kann man ohne Chemiestudium lesen. Was mich allerdings ein wenig gestört hat war, dass Milcheiweiß in der Sauce enthalten war, sodass mein Mann nichts davon essen konnte. Leider ist das ein häufiges Problem. In vielen Produkten sind Milchbestandteile enthalten, sodass Menschen mit Laktoseintoleranz oder einer Milcheiweißallergie oder auch einfach Veganer diese Produkte nicht essen können. Das ist nicht nur schade, sondern eigentlich auch überflüssig, weil ich mir sicher bin, dass die Sauce auch ohne Milcheiweiß sehr gut schmecken würde. Aber Nicht-Veganern und Nicht-Allergikern kann ich die Sauce empfehlen.

Nun aber zum Rezept für einen leckeren, sommerlichen, erfrischenden Wrap.

Für eine Person:

1 TL Currypulver

1 Wrap (ich habe einen mit Leinsamen verwendet)

Ein paar Salatblätter

Etwas rote Paprika, in Würfel geschnitten

Etwas frische Mango, geschält und in Würfel geschnitten

1 Lauchzwiebel, in feine Ringe geschnitten

Etwas Curry-Mango-Sauce (oder 50ml Curry-Mango-Sauce vermischt mit 50ml Kokosnussmilch und kurz aufgekocht)

Hähnchen Gyros

Hähnchen Gyros mit mariniertem Hühnerfleisch, in warmen pitas gewickelt und mit cremiger Tzatziki Soße.

  • Zubereitungszeit 30 Minuten
  • Gesamtzeit 60 min
  • 6 Portionen

1 Tasse Yoplait® griechischen Joghurt 1 Gurke, geschält und entkernt 1 TL gehackter Knoblauch 1 TL Weißweinessig Salz und Pfeffer Schuss Olivenöl Spritzer Zitrone

Huhn fГјr die Marinade:

2 Teelöffel gehackten Knoblauch Zitronensaft von einem (2-3 Esslöffel) 2 TL Rotweinessig 2 Esslöffel Olivenöl extra vergine 2 gehäuften Esslöffel Yoplait® griechischen Joghurt 1 Esslöffel getrockneter Oregano Salz und Pfeffer 1 1/4 Pfund ohne Haut, Hühnerbrust

FГјr die Kreisel:

2 Tomaten, entkernt und gewГјrfelt 1/2 Tasse rote Zwiebel, gewГјrfelt 6 Pitas oder Fladenbrot

  • 1 Hacken Sie die Gurke in einer KГјchenmaschine oder Fetzen. Гњber 1 / 4-1 / 2 Tasse. Wrap in ein Handtuch und drГјcken, um so viel Wasser wie mГ¶glich zu entfernen. Mischen Sie den Joghurt, geschreddert Gurke, Knoblauch, WeiГџweinessig, Salz und Pfeffer abschmecken, und Zitronensaft. Drizzle leicht mit OlivenГ¶l. KГјhlen Sie mindestens 30 Minuten vor dem Servieren so die Aromen verschmelzen kГ¶nnen.
  • 2 Um das Huhn Marinade bereiten, verbinden Sie den Knoblauch, Zitronensaft, Rotweinessig, OlivenГ¶l, Joghurt, Oregano, Salz und Pfeffer in eine mittelgroГџe SchГјssel probieren. Schneebesen gut verrГјhren. FГјgen Sie die HГјhnerstГјcke in die SchГјssel geben und gut mischen zu beschichten. Bedecken Sie und kГјhlen Sie mindestens 30 Minuten. Die Aromen werden Sie das Huhn, je lГ¤nger ziehen lassen es mariniert. Entsorgen Marinade nach Gebrauch.
  • 3 Koch Huhn in einer Pfanne bei mittlerer Hitze 5-7 Minuten oder bis getan. Sobald das Fleisch gar ist, tranfer an eine Platte und ruhen lassen fГјr 5 Minuten. In kleine Streifen schneiden.
  • 4 Warm Pitas in der Mikrowelle. Top mit Huhn, Tzatziki, gewГјrfelten Tomaten und Zwiebeln. Sofort servieren.

Griechisch Hähnchen Gyros

Ich wurde angefragt griechischen sein. Als ich sah den Film My Big Fat Greek Wedding, konnte ich nicht helfen, aber das Gefühl, dass ich meine eigene Familie zu beobachten. Genau wie die griechische Kultur, ich wuchs in einer großen Familie mit starken religiösen Überzeugungen, die gerne essen.
